Tapioca can mean several different things in cuisine:

  • Tapioca Starch — a refined flour derived from the cassava root, sometimes called tapioca flour
  • Tapioca Pearls — small spheres of tapioca starch, often used in puddings such as tapioca pudding, and as a substitute for sago
  • Tapioca Pudding — a thick, sweet pudding made from tapioca pearls (and sometimes, cooked rice)
