Rødkål - Red Cabbage

  • 1/4 cup (60ml) butter
  • 5 lbs (2350g) red cabbage, finely cut
  • ½ cup (120ml) vinegar
  • ½ cup (120ml) sugar
  • 1 Tablesp. salt

ProcedureEdit

  1. Brown butter lightly.
  2. Add finely cut cabbage and stir well.
  3. Add vinegar, sugar and salt.
  4. Let simmer 2-3 hours.

To reduce cabbage odour, bring the mixture to a boil, then place in a 325°F/160°C oven in a covered container for two hours. The flavor is even better when it is reheated.
