Procedure

  1. Peel and slice the pineapple.
  2. Peel the citrus and remove the pith and pips, saving any juice that may drip from the fruits.
  3. Boil up 1 cup water in a thick pan, add the honey to taste, but do not make it too sweet, and the juice and peel from all the fruit.
  4. Boil quickly for 20 minutes until it becomes sticky.
  5. Strain and pour over the fruit while hot.
  6. Serve cold.
