Ofada rice is a Nigerian food that can be cooked in different ways.

  1. Rinse the rice until the water runs clear.
  2. Bring a pot of water to a boil. Stir in the rice and some diced onions. Cover, and simmer for 15 minutes.
  3. Drain the rice in a sieve.
  4. Grind together the red bell pepper, tomatoes, onion, and ginger.
  5. Heat a thin layer of groundnut oil in a pot, and add some diced onions. Stir well, and add the green bell pepper, green beans, sausages, carrots, spring onions, prawns, cinnamon, and nutmeg. Cook for a few minutes, stirring.
  6. Stir in the ground tomato mixture, as well as the curry powder, thyme, and a little water. Bring to a boil and season with salt.
  7. Stir the drained rice into the sauce, cover, and cook until the liquid is absorbed.
