Nigerian mini sausage rolls are small pastries filled with seasoned sausage meat. They are eaten across Nigeria.

  1. Combine the flour, baking powder, and salt in a large mixing bowl.
  2. Use a spoon to scoop small bits of margarine into the flour mixture. Use your fingers to rub the margarine into the flour until the mixture resembles crumbs.
  3. Mix in small amounts of water until a stiff dough ball is formed.
  4. Knead the dough thoroughly, then place it in a basin. Cover it, and let it rest for 15 minutes.

Filling edit

  1. Combine the sausage meat, nutmeg powder, and seasoning cubes.
  2. Blend to a smooth paste with a hand blender, and set aside.

Assembly edit

  1. Knead the dough for 10 minutes until smooth and stretchy.
  2. Roll the dough out to a reasonable thickness. Use a knife to trim the edges and form a rectangle.
  3. Break the egg and beat it well.
  4. Brush the dough rectangle with a thin layer of beaten egg. Arrange the sausage filling along one of the rectangle's long edges.
  5. Fold the dough over the filling, and roll it up. Slice the roll into pieces of your desired length.
  6. Grease a baking sheet with margarine, and dust it with flour to prevent sticking. Transfer the sausage rolls to the pan, seam-side down.
  7. Brush the rolls with some beaten egg. Bake the rolls for about 30 minutes at 350°F, or until golden brown.
