Efo igbo soup is a native Nigerian (specifically Yoruba) soup made of white eggplant leaves.

- Meat
- Efo igbo (garden eggplant leaves)
- Fresh bell pepper
- Onions
- Tomatoes
- Iru
- Salt
- Dryfish
- Ground crayfish
Procedure edit
- Wash and boil the meat.
- Wash the efo igbo with with salt to remove the bitter taste.
- Blend together the peppers, onions, and tomatoes to make a paste.
- Heat a thin layer of oil in a pot. Add the pepper paste, a lot of iru, and salt. Let boil for about 12 minutes.
- Add your the boiled meat, fish, and ground crayfish. Boil for another 7 minutes.
- Add the efo igbo leaves, and allow then to steam for 2 minutes.
- Remove from the heat, and serve with rice or a swallow.
