Meshayi, also called meshai or press am, is a Nigerian sandwich stuffed with egg and other components. It is a street food originating in northern Nigeria, but it can now be found across the country.

  1. Break the eggs into a bowl, and beat them.
  2. Mix in the peppers, onions, cabbage, curry, thyme, and salt.
  3. Heat some oil in a pan. Add the egg mixture, and cook until the egg is done. Remove from the heat.
  4. Halve the bread lengthwise. Top one half with the cooked egg and the other half with some pieces of suya.
  5. Sandwich the two halves together.
  6. Heat some vegetable oil in a frying pan. Fry the sandwich on both sides until golden brown.
  7. Serve.
