Chufa (Cyperus esculentus L. var. sativus) consists of the tuberous roots of an African plant of the sedge family. Chufa "nuts" are very popular in Spain and Mexico, and are also known also as tiger nuts, earth almonds, and earthnuts.

They are often utilized as an ingredient for a drink, horchata. The "nuts" are also consumed widely as a snackfood.

Chufa has a brown, bumpy exterior, and has a chestnut like flavor. It can be found in many Latin markets and natural food stores.

Chufa can be properly stored for up to a year in a cool, dark place, when tightly wrapped.
